Couscous Salad

This week we tried a new recipe a black bean couscous salad:

3/4 cup water
3/3 cup whole-wheat couscous
1/2 cup canned corn or thawed frozen corn
1/2 cup diced green pepper
1/2 cup cherry tomatoes, cut in 4
1 cup canned black beans, drained and rinsed
1/4 cup green onions, chopped
1 tbsp finely diced cilantro
Juice of 1 lime
1 tbsp olive oil
1 tsp cumin
1/2 tsp black pepper

In a small pot, bring water to a boil. Turn off heat and add the couscous. Let sit for 5 minutes then fluff with a fork and transfer to a large bowl.

Add rest of ingredients and toss
Chill for 1 hour then serve

Protein: 10g
Total fat: 4g

Pepper, Sue Ellen, Petra and Chance loved it and Yoko was not to sure if he liked it or not!
